One of our favorite OBX restaurants has changed hands, “THE BLUE POINT IN DUCK”. Don’t worry, it’s staying in the family (sort of) John and Sam, are so pleased to pass on their “baby” to their employees Ryan, Jamie, and Leigh Raskin – 3 siblings who are passionate, capable, and enthusiastic restaurant professionals. We have been in several times since and it’s running as the 5-star restaurant it is. Along with this announcement, I thought it fitting to include one of their famous recipes
Carolina Jumbo Lump Crabcakes 2lbs jumbo lump crabmeat 2 eggs 1 T mayonnaise 1 T whole grain mustard ½ c green onions, minced 1 t horseradish 1 ½ t Old Bay Seasoning 1 t baking powder 3 T bread crumbs Instructions:
Do not shred crab meat. Chill. In a separate bowl lightly whisk together the eggs, mayonnaise, mustard, green onions and horseradish. Fold in the Old Bay, baking powder and bread crumbs. Chill.
Remove from refrigerator and gently form crabmeat into individual cakes approx. three ounces each. This preparation can be done up to one day in advance. To cook crabcakes, dust crabcakes in flour. Heat peanut oil in a non-stick pan on medium heat for three to four minutes. Pan fry crabcakes for two minutes on each side or until golden brown. Remove from pan and drain on paper towels to remove excess oil. Rewarm cakes in a preheated 300 degree oven for 5 minutes before serving.
